Dark and Stormy

Cocktails for Kids (Well, Sorta)

It was a dark and stormy … OK, not really. It’s not generally dark and stormy here in San Diego, and we were saving this cocktail recipe for the perfect balmy, summery, island-breezy day. But then … we were asked to donate a tray of cocktails to raise money for a small school. In a traditionally dark and stormy place. And we thought, heck, let’s send them a ray of Caribbean sunshine. Or at least, the parents.

Tonight, we toast the parents — and the charming PTA prez — at Sanislo school in Seattle! Cheers!

Dark and Stormy
2-3 oz dark rum
5-8 oz ginger beer (we like Bundaberg)
juice of 1/2 a lime

Fill a tall glass with ice. Fill 3/4 full of ginger beer. Top with rum and a squeeze of lime. Garnish with a lime and stir stick (don’t stir before serving — makes a nice stormy sky in the glass, but gives a very bright summery taste).

Be smart, safe, and healthy. Drink in moderation. Don’t drink and drive. No matter what the cocktail recipe. Or how rainy it is. Or even if you have a mooring ball and you don’t have to worry about your double anchor contraption. Your hosts at Thursday Happy Hour thank you.
