Kick Away Those Winter Storms

We're feeling fortunate in San Diego this winter. Nearly two weeks until the first day of spring and it's 24 degrees in Minnesota, but it feels like 12, and it's a wet 43 in Seattle. We, however, are enjoying this nice warm California drought. Even if we do have to ration our water. This Thursday, we're sending warm toasts to our cold-weather friends with a cozy, comfy kick of a cocktail. Put aside your leftover coffee Thursday morning for this recipe …

The Inspiration

For me, Francis the Mule bridges the gap between winter and spring: it's warm and sweet and bright and acidic. I found a version of this cocktail recipe by Ted "Dr. Cocktail" Haigh (Shelly appreciates the cleverness of this bio) in the December issue of Imbibe magazine. His mix of flavors always surprise me in their sophistication, and I've been waiting too long for a chilly Thursday Happy Hour to share it with friends.

The Recipe
: Francis the Mule (modified from Imbibe magazine)

2 oz. bourbon
1/2 oz leftover coffee, chilled
juice of 1/2 a lemon
teaspoon of amaretto
teaspoon of simple syrup

2-3 dashes Angostura bitters

Shake well over ice. Strain into a cocktail glass and garnish with a twist of lemon peel.

Be smart, safe, and healthy. Drink in moderation. Don't drink and drive. No matter what the cocktail recipe. Your hosts at Thursday Happy Hour thank you.
