Rum 'n' No-Coke

"I usually drink rum and Coke," Ted said at Thursday Happy Hour LIVE last week, and when I gave him a quizzical Really? look, he added, "but not just any rum and Coke. A special rum and Coke."

That instantly made me think of the last time I had a special rum and Coke … back in the Caribbean. It was Diet Coke with Pineapple Cruzan rum, a light-on-the-alcohol treat perfect for extremely hot weather. But that's not exactly the recipe that Ted had in mind. And Gary was convinced we could do better than even that. You be the judge:

Ted's Rum 'n' Coke

Mexican Coke in the glass bottle made with sugar, not corn syrup (found at Latino supermarkets and authentic taco shops)
Ron Zacapa Rum (also sugar based, not molasses based)
ice
squeeze of lime

Fill a tall glass with lots of ice. Pour a couple ounces of rum and top with Coke, to taste. Stir gently with a straw and squeeze a wedge of lime on top.

Gary's Rum 'n' No-Coke

2 oz dark rum (we used Meyers)
1 oz Pineapple Cruzan rum
3/4 oz Black Strap Cruzan rum
2 dashes Angostura bitters
top with soda water
juice of 1/4 lime
ice

Fill a tall glass with ice. Pour in the ingredients, top with soda. Stir gently. Sip. Tastes like Rum 'n' Coke (only better), doesn't it?

Note: Secret ingredient here is the Black Strap — it brings the dark, carmelly cola flavor to the drink.

Although flavored Cruzan rums are low on alcohol, they go down fast and can still make you loopy. So don't fill your water-bottle and hit the road with one. Please treat rum with respect. And be safe. Thank you.

    A Cuba Libre is White Rum, fresh lime juice and Mexican Coke…yumm!

    Great idea, Claudia. I think I saw Mexican Coke at Home Depot recently. Sweet.
