The Bitter-Sweet Truth

It seems that tequila is one of those spirits that people either love or hate. It took me a long time to gain an appreciation for its signature flavor profile and many bartenders are just now beginning to use tequila beyond the margarita. Same thing goes for that bitter snap of quinine in tonic water – people love it or hate it. So what happens when you pair both ingredients? It’s remarkably perfect.

We have a good friend that loves tequila. The good stuff. And he’ll admit to being a bit of a snob about it. So, when I suggested he try a tequila tonic he scoffed. Then tried it. And liked it. There is something about tequila that sits very well with the sharpness of quinine. When you’re looking for a quick, easy, and interesting refresher, we think this recipe deserves a regular space in your book of tricks.

Tequila & Tonic

  • 2 oz. tequila (We prefer silver or plata for this)
  • 2-6 oz. quality tonic (Fever Tree is exceptional, as is Q Tonic)
  • 1 lime
  • Ice
  • Coarse salt

Rim a double old-fashioned rocks glass with lime juice and salt. Fill with ice, and juice half of the lime into the glass. Add the tequila, top with tonic and stir. Garnish with a lime wedge or two.

Delicious variations: Instead of tonic, use Fever Tree Bitter Lemon. It has a touch of quinine and a more citrusy nose. Add a dash of orange bitters to round out the flavor.
